Chocolate fondant with a molten centre
Little chocolate cakes with a hot, gooey centre that flows out when you break them open. The secret is not to overbake — a set crust outside, molten chocolate within.

Ingredients
- Dark chocolate — 100 g
- Butter — 100 g
- Eggs — 2
- Sugar — 60 g
- Flour — 40 g
- A pinch of salt
Method

Melt the chocolate with the butter over a water bath.

Whisk the eggs with the sugar until fluffy and fold into the chocolate.

Gently stir in the flour and salt until smooth.

Pour into greased ramekins and bake at 200 °C for 9–11 minutes.

Tip: the centre should still wobble — that's what makes it flow.
